Top Chef Portland

Did anyone watch Top Chef Portland? I think it was one of the best seasons ever.

I didn't do a recap, and I'm not sorry. It was nice to actually enjoy watching the show rather than taking notes and trying to come up with jokes. Because the pandemic caused this season to be very straightforward, with a big focus on the food itself--no gimmicky challenges, no traveling for the finale--I think my recaps would have been pretty dry anyway.

I love that most of the contestants were non-white. It gets a little dull watching white folks cooking the same French-inspired stuff all the time. Latin American/Mexican and Asian cuisines are my jam, so I would have been quite happy to judge all of the goodies presented by Shota, Maria, Gabe, Jamie, Byron, and Avishar. Dawn was my favorite contestant though. She must have made some fabulous food if she could survive leaving stuff off plates on multiple occasions!

I even thought Dawn could pull off a win all the way into the finale's Chef's' Table, but after listening to the judges deliberate, I realized that Gabe was the winner. Deservedly so, as his food shone all season long. But have you read about the controversy surrounding his firing from restaurant Comedor? Apparently he was in a "consensual sexual relationship" with a female staffer--in other words, fucking around on his wife--pre-Top Chef, and cut the woman's hours once he returned. Allegedly for a "decline in her performance." We can assume this means on the job, but maybe she just didn't want to sleep with him anymore? That sort of toxic male behavior should no longer be acceptable in the culinary industry. I'd love to see that big check taken out of Gabe's hands and put into Dawn's. Or Shota's.

Is anyone watching Top Chef Amateurs? I'll be tuning in.

Mason Dixon Master Chef Tournament 2017 Finale

After many weeks of competition, the ranks have been whittled down to two chefs who will battle it out on Sunday, August 13th, to become this year's champion. The finalists, Fabio Mura of Grille 620/River Hill Grill and Damon Hersh from the Inn at Brookeville Farms, are seasoned veterans, so this should be a great show for all who turn out to cheer them on.

Get your tickets at http://www.masondixonmasterchef.com/purchase-tickets/. The price for this special finale battle is $65 per person, which include all taxes, a wine tasting by Boordy Vineyards, passed hors d’oeuvres, the competition, dessert, and coffee. New this year, ALL Tickets for the competition are "Judging Experience" tickets, which allow all guests to taste each of the six courses the chef teams produce and be part of the voting to decide the winner. Believe me, being able to taste the chefs' dishes really adds to the experience.

The competition will be held at Points South Latin Kitchen in Fells Point. Doors open at 5:30, the action starts at 6pm. Hope to see you there!

---------------------------------------------------------------------------------

The field of 16 top area chefs has been narrowed to the top 10 as the Mason Dixon Master Chef Tournament prepares to complete Round 1 of competition next week.

After just three weeks of competition and six matches, the field of chefs competing in The Mason Dixon Master Chef Tournament (www.MDMasterChef.com) is starting to dwindle, while the money raised for Meals on Wheels of Central Maryland (the Tournament’s charity partner, who receives 10% of the proceeds) continues to rise.

Remaining chefs include:

Wilbur Cox, Jr., Bistro Rx
Cole Whaley, Café Rue
Lanydrek Christ Pandzou, Colony South Hotel
Rick Koplau, Duke’s Grocery
Sean Praglowski, Luckie’s Tavern
Jirat Suphrom-In, My Thai
Melissa Fordham, Personal Chef Services
Bill Kelley, Renditions Golf
Jeff Keeney, Tark’s Grill

With Battle Backyard BBQ, Battle Breakfast and Battle Chocolate over, the remaining chefs are looking forward to Battle Comfort Food next week to finish off Round 1. The Tournament was dark this week in observance of Independence Day, but will resume on Monday, July 13 and Tuesday, July 14 with the following match ups:

Monday, July 13
Melissa Fordham
Personal Chef Services/Blue Bistro & Catering/Gourmet Again
vs
Wilbur Cox, Jr.
Bistro Rx

Tuesday, July 14
Sean Praglowski
Luckie's Tavern
vs

Mason Dixon Master Chef Tournament 2013 Has a Winner!

The Mason Dixon Master Chef Tournament, a live, local, interactive culinary competition concluded this week after 15 events and eight weeks of competition.

Sixteen chef teams have been competing in this single-elimination tournament since mid-June to determine who would take the title of 2013 Mason Dixon Master Chef Champions. Last night in front of a sell-out crowd at the Mari Luna Bistro in Mt. Vernon it was decided – Bond Street Social took the title!

Bond Street Social and Iron Bridge Wine Company competed in last night’s Final Championship match “Battle New York”, which featured products from several sponsors including Kobe beef products from AMBriggs, Buttermilk Blue Afinee and Vermont Butter from Emmi Roth USA, prepared Horseradish from Tulkoff Foods, and Pecans from Azar Nuts. Teams were required to use all featured products in their dish creations.

Both teams had previously won three matches to earn the right to compete in the final, and each prepared dishes that the expert judges (Chef/Owner Marc Dixon of Bistro Blanc, Chef/Owner Ted Stelzenmuller of Jack’s Bistro, and Mitchell Platt of Woodholme Country Club) described as the best they had seen in the summer-long competition.

The Iron Bridge Wine Company team (Chef Christopher Lewis, Sous Chef Lee Marziale, Jr., and Chef’s Assistant Tyler Skinner) wowed with an appetizer of WAGU TARTAR (red onion, horseradish, hollandaise, everything bagel chips), entrée of ROASTED WAGU STEAK (roasted parsnip puree, buttermilk onion ring, local apple, baby vegetable, red wine demi, roasted marrow blue cheese foam), and dessert of PEANUT BUTTER CHEESECAKE TRUFFLES (toasted pecans, cherry reduction jam, peanut butter powder).

Bond Street Social (Chef Neill Howell, Sous Chef Valerie West and Chef’s Assistant Adrienne Burratta) prepared an appetizer of WAGYU and FOIE GRAS DUMPLING (star anise, lemongrass and sesame broth), entrée of BLACK PEPPER RUBBED WAGYU HANGAR STEAK (caramelized cipollini onion, blue cheese and bacon butter, duck fried pomme nuef potato), and dessert of OLD SCHOOL STICKY TOFFEE PUDDING (pecan brittle, brandy cream, toffee sauce).

The winning Bond Street Social team received $1000 cash from the organizers, $1800 in culinary prizes from sponsors, a Wisconsin cheese making trip with sponsor Emmi Roth USA which includes an overnight trip with behind the scenes education and tours of cheese making facilities as well as a beer brewery tour (valued at approximately $2000), the official Chef a la Mode Championship jacket, a plaque for the winning restaurant, and of course bragging rights as the 2013 Mason Dixon Master Chef Champions! The First runner up also receives culinary prizes from sponsors valued at close to $1000.

However, the biggest winner of the night was charity partner Meals on Wheels of Central Maryland, who received a check for $2,500 from the organizers at last night’s event.

The organizers would like to thank all of their sponsors, the chefs and restaurant participants, the expert judges, and everyone who came out to support the event over the summer. People interested in finding out about next year’s tournament or chefs interested in applying to compete should visit the web site at www.MasonDixonMasterChef.com to sign up for updates or fill out the online chef application.

New Food Network Offerings

The Food Network has a bunch of new shit shows coming down the pipeline in the upcoming months, most of them competitions or non-cooking reality shows. Do any of them seem like something you'd watch? I'm really not sure about most of them, but I'd probably give Bobby Flay's and Alton Brown's new shows a chance.

Notice that none of them involve last season's Next Food Network Star winner, Justin Warner.

July 2013 Premieres

Food Court Wars. Hosted by Tyler Florence, this show sounds like a pared-down version of NBC's megaflop, America's Next Great Restaurant. Food entrepreneurs battle against each other to win a food court restaurant rent-free for a year. Hopefully the winner's restaurant will be around for more than a couple of weeks, unlike the poor schmuck who won ANGR's joint.

Bubba's Grills Gone Wild. Custom grill building. Yawn.

August 2013 Premieres

Chef Roulette. Cooking competition in which four chefs attempt to create a meal despite also having to spin a wheel of (mis)fortune that may affect their dishes. Sounds like a clusterfuck with promise.

The Shed. Do you have interest in following around a Mississippi family that owns a chain of bbq restaurants? Me neither.

September 2013 Premieres

On the Rocks. Restaurant Impossible/Kitchen Nightmares, but with bars. I've had enough of this genre already.

Cutthroat Kitchen. Alton's new show is a cooking competition that allows competing chefs to sabotage each other while he laughs maniacally in the background. Could be fun.

Grocery Games. Another cooking competition that revolves around grocery shopping. Seriously?

October 2013 Premieres

Extreme Tupperware Ladies. A reality show about people who sell Tupperware. What's next - a show about Avon ladies? Mary Kay ladies? Pampered Chef ladies? (Please don't tell me these shows already exist.)

Bossover. Master Chef's bitchy Joe Bastianich will be making over bad restaurant bosses. No word if he and his business partner Mario Batali will be among them.

Restaurant Divided. Failing family-run restaurants are split into two warring factions that must compete against each other to improve the restaurant.

November 2013 Premieres

Restaurant Express. Aren't we sick of Robert Irvine yet? Apparently not. The bucktoothed Brit tests the business skills of a bunch of restaurateurs. On a bus. WTF?

TBD 2013 Premieres

Beat Bobby Flay. Like Throwdown, but instead of Bobby surprising chefs at their home base, the challengers will go to NY to play on Bobby's turf. He lost most throwdowns; he'll probably win more of these. Unlike most of you, I *like* Bobby Flay and would watch.

Chef Marks the Spot. This one seems rather involved. Two chefs are blindfolded and taken to a non-restaurant environment, where they have to source ingredients within a 50ft radius and cook a meal. Would be more fun if the blindfolds were left on.

Early 2014 Premieres

Amateur Chefs Competition Show. Amateur chefs compete against each other in a cooking show. Duh. Apparently they'll be coached by celebrity chefs. In the Food Network world, this probably means Bobby, Giada, Robert Irvine, etc.

Undercover Critics. Restaurants are secretly reviewed and allowed to fix any fuck ups before the review is published. What's the fun in that?

The Tournament!

I've mentioned the Mason Dixon Master Chefs Tournament here a few times in the past, but today I am going to go into more detail. Why? Because this past Monday, August 2, I had the honor of being an expert judge and I want to share my really fun experience with you. But first, let me tell you more about the competition.

The Tournament pits pairs of chef/sous chef teams against each other in a series of hour-long cooking contests. Thirty-two chefs entered the competition which started way back in May. After a sixteen-battle first round, the winning chefs are currently going head-to-head in the second round, which ends on August 10th. The ultimate challenge of the competition comes on September 13th when two finalists will battle it out for the ultimate title of Mason Dixon Master Chef.

The event is being held at the Belvedere Hotel, in a ballroom on the very elegantly-appointed 12th floor. On the evening I attended, the competitors were caterer/cooking instructor Sarah Mogol of The Bountiful Experience, and Mark Dunaway of "upscale crabhouse," Canton Dockside.

As the chefs set up their stations, guests were able to mingle during Happy Hour and then dine on a multi-course meal provided by Truffles, the Belvedere's resident caterers. Critical wench that I am, I have to nit-pick on the fact that the "intermezzo" of a rather clunky cantaloupe sorbet was a bit redundant after an appetizer that consisted primarily of cantaloupe and honeydew melon with an odd selection of accompaniments (bits of olive, shreds of sundried tomato, a tiny bit of brie, and prosciutto). My entrée of sliced beef filet, however, came with a plethora of vegetables and a crispy onion topping and was overall quite nice.

Chef Sarah Mogol prepares her bread pudding.
During the final throes of our dinner, at 7:30, the competitors were given 30 minutes to do "cold prep." Chef Mogol's team took great advantage of this time, as much of her team's food involved chilled elements. At 8 PM, the competition began in earnest as burners went on and meat started sizzling..

At this point, most of the guests were on their feet around the cooking stations, watching the teams preparing their three-course meals. I was impressed that both chefs were very calm and collected as they worked, even as emcee Jerry Pellegrino peppered them with questions about their dishes and wandered around their kitchens behind them.

Chef Dunaway sautéing duck breast.
At the end of an hour, the chefs beauty plates were presented for the diners to admire while the expert judges - Damon Hersh of the Tournament's charitable partner Movable Feast, Ted Stelzenmuller of Jack's Bistro, and me -  took our seats and awaited the tasting portion of the program.

We were brought our food in six courses, one dish at a time, rather than receiving both apps, etc., simultaneously. This made it easier to judge each dish on its own merits, rather than comparing them to the other dish in the category.

First we received Chef Dunaway's appetizer, his version of saltimbocca, done as a roulade of Prosciutto-covered veal stuffed with asparagus and gouda cheese. While the presentation was nice, the veal was a bit chewy and gristle-y and overall the dish suffered from a surfeit of salt.

Chef Mogol's app was a play on tomato soup and a grilled cheese sandwich. The chilled soup, plated in concentric circles of pink and yellow flecked with green, had a light and refreshing flavor with the perfect balance of acid and seasoning. The accompanying French toast-style sandwich with mozzarella cheese fell flat by comparison; the bread was too thick and lacked the crisp crust that is integral to the whole creamy/crunchy soup and grilled sandwich experience. Also on the plate was a salad of shaved asparagus and cheese. While refreshing and light and nicely seasoned, there was no need for another acidic element in the dish.

Salt once again proved to be Chef Dunaway's undoing in his entrée of duck breast with onion marmalade and multi-colored potatoes. The meat was beautifully pink and juicy but was as salty as ham. Disappointingly, the fat had not been rendered nor the skin crisped. The onion component was a nice sweet counterpoint, but the cute potato shapes were a bit too precious and insubstantial. A better choice would have been a green vegetable to break the monotony of the mostly-brown plate.

Chef Mogol also had difficulty with her duck breast. It was a bit overcooked and was presented with none of the fat or skin. It was accompanied by a wildly-colored cold salad of orzo, peaches, asparagus, pine nuts, and assorted other vegetables, a cilantro sauce, and a balsamic drizzle. There were far too many components on the plate, which might have worked better without the cilantro sauce. Although it is my favorite herb, I thought it added a cacophonous note to an already overly-busy dish.

Chef Dunaway's dessert was a blueberry tart served on a roasted vanilla bean creme Anglaise. The creme was on the thin side and unfortunately did not have a flavor anywhere near as delightful as the smell of those beans as they roasted. The tart filling was nice, however, not the usual over-sweet goop that one finds in a typical blueberry pie (possibly my least favorite of pies). The shell was pre-prepared and blandly serviceable, making the dish seem like a particularly luxurious Pop Tart. (That is actually meant as a compliment. I like Pop Tarts.)

From the other side of the room, Chef Mogol presented a bread pudding made with Buttershot schnapps, on a pool of more creme Anglaise, plus a tiny dollop of sweetened whipped cream on the side. I loved the butterscotch flavor, but thought the pudding would be more successful with a scoop of ice cream - olive oil gelato perhaps - and a nice pinch of sea salt.

Chefs Hersh, Stelzenmuller, and I had to grade these six dishes in three categories, giving up to 8 points each in plate presentation and creativity, and nine in the category of taste. Additionally, there were audience members who paid for the ability to try the food as part of the "Judge Experience," plus some randomly-drawn "Guest Judges" who were able to add their input on the competitors' entrée courses.

After all of the points were tallied, Chef Sarah Mogol emerged the victor.

Personally, I had a great time. I met some ladies who loved to eat, talk about food, and watch cooking shows - girls after my own heart! Being a judge for a live competition was a little strenuous because I had to come to my conclusions about the food pretty quickly. After a few chews, the emcee was handing us a mic so we could tell the chefs what we thought about their dishes. It was gratifying to know that my opinions weren't all that different from those of the two professional chefs at my side - or maybe we just had the same sensitivity to salt. :) In any case, it was fun and I would do it again in a heartbeat.

Congratulations to Chef Mogol for making it into round three, and kudos to Chef Dunaway as well for putting himself out there. Hopefully the competition will get attention for both of them and their businesses. And for all of the other participating chefs as well.
