Wit on the Water Patio Opening Party

On April 26th, join the party at Wit on the Water, Wit & Wisdom's patio. The season opening celebration will feature a new all-crab-themed menu, plus new frozen cocktails, local beers, and live music.

The party runs from 5pm - 8pm. Advance tickets are $35 ($45 at the door), including tax and gratuity, and include unlimited food and a welcome drink. Get your tickets via Eventbrite.

If the weather looks bad, the party will still go on, it'll just be moved to Wit & Wisdom's indoor lounge.

More Fun at Wit & Wisdom

I love the way the team at Wit & Wisdom keep things interesting for their guests! Last year, they started this fun Wednesday-night theme dinner thing called Curated at their Kitchen Table (a 12-seat counter with full view of their huge kitchen). We attended the Italian dinner last year and were fed several courses by Chef Zack Mills including pasta cacio e pepe and braised veal shank, and Pastry Chef Dyan Ng's riff on zabaglione, all with wine pairings by Sommelier Julie Dalton. For 2017, they're switching things up a bit.

The Kitchen Table Series will still take place on Wednesdays, and they will still be multi-course events, but the themes will rotate through the skills of chef (savory themes), pastry chef (dessert themes), and sommelier (beverage themes).

Today, February 1 is the inaugural event, and it has a boozy theme: Champagne Taste on a Beer Budget. It's $29 per person, and there will be light bites and snacks provided by Chef Zack to go along with Julie's tastings.

The Kitchen Table Series will take place every Wednesday evening at 7:00 p.m. beginning February 1. For more details and to reserve your spot at the Kitchen Table, please call Shannon Toback at 410-223-1464.

Happy Birthday Wit & Wisdom!

I was surprised to realize that Wit & Wisdom opened its doors on November 14th, 2011. It's only been five years, but the place is so much a part of the Baltimore dining scene, it seems like much longer. To me anyway.

To celebrate the big Five, the restaurant is offering a special "Five Years of Wit & Wisdom" five-course prix fixe menu from Wednesday November 9th through Monday the 14th, featuring the restaurant's most popular dishes over the years. Plus, there's a special anniversary cocktail to wash it all down ($5 from every cocktail purchase will be donated to the Living Classrooms Foundation). Of course you can also opt for their fabulous sommelier Julie Dalton to help you choose the best wines to pair with each course. Bonus: diners who opt for the "Five Years" menu get a recipe card featuring their luscious lobster pot pie.

East Meets West at Wit & Wisdom

Superstar chef Michael Mina will be joining Wit & Wisdom's Zack Mills and Dyan Ng in the kitchen next Wednesday, March 25th, for a little battle of the coasts. That would be fun to watch, wouldn't it? A little Top Chef right in Baltimore. There's no real battle though, instead, the chefs will be preparing a five-course dinner, with each course featuring a favored ingredient of each coast.

The dinner starts at 6:30 and will feature the following dishes:

1st

Brunch at Wit and Wisdom

Mr Minx and I were recently invited to try Wit & Wisdom's revamped brunch buffet. Despite our usual lazy weekend mornings that involve eating breakfast in the vicinity of noon, we don't consider ourselves to be brunch people. Our experience at Wit & Wisdom might just change that.

The brunch buffet there is serious. Executive chef Zack Mills' offerings include everything from soup to nuts. (Almost literally--we didn't see any nuts.) There are plenty of familiar breakfast options like scrambled eggs, potatoes, Belgian waffles, buttermilk pancakes, biscuits and gravy, and omelettes. But there are also salads and soups, raw oysters, smoked salmon, poached shrimp, and more substantial items like pulled pork, roasted salmon, and teres major.

Near the front of the line was a chef's choice table featuring flavors of the Middle East, including some lovely lamb chops that, despite resting under a heat lamp, were perfectly pink and juicy inside and nicely crusty on the outside. There was also hummus and labne with pitas, a spiced rice pilaf, and a pot of ful medames, an Egyptian fava bean stew.

There's also a section of items for the kids--thoughtfully arranged on lower, child-height tables--with chicken fingers and fries, mac and cheese, and peanut butter and jelly sandwiches.

We had to try a little of everything. Well, almost everything, because two people couldn't do the expansive buffet justice. Everything we tried was quite good and served at the proper temperature. My favorites were the lamb chops (I was so tempted to make a pig of myself and eat two) and the roasted root vegetables.

The dessert table was hard to resist. Pastry chef Dyan Ng's tiny croissants and other sweet morsels are a perfect ending to the meal. Even if you pig out on savories, there's always room for a tiny cream puff or a couple of spoonfuls of rich rice pudding. Or both.

In addition to all of the various eats, Wit & Wisdom's brunch also features a build-your-own Bloody Mary bar and bottomless Mimosas. A full array of cocktails crafted by lead bartender Aaron Joseph are also available. (We chose to stick to more traditional breakfast beverages: coffee and freshly-squeezed orange juice.)

Wit & Wisdom's brunch is served on Sundays from 9am - 2pm. The cost is $49 for adults and $19 for children 12 and under. Yes, the price is steep, but you probably won't need to eat for the rest of the day....

July 4th at Wit & Wisdom

Wit & Wisdom is having a blow-out part for the Fourth of July!

There will be foodie-worthy cuisine provided by Wit & Wisdom chef Zack Mills and guest chef Tim Dyson from Bluegrass Tavern, plus desserts by executive pastry chef Dyan Ng. Eats include modern twists on nostalgic staples like Chesapeake fried chicken, pit beef sandwiches topped with tiger sauce and caramelized onions, and bratwurst drizzled with beer mustard and sauerkraut. Seafood lovers are in for an ultra-fresh treat with the chef’s specialty oyster-shucking station, an ode to the local flavors of the Chesapeake Bay. Sides include grilled corn on the cob, Mom’s potato salad, and classic mac ‘n cheese. For beer, cocktail and wine connoisseurs alike, Wit & Wisdom has partnered with local brewer, Union Craft Brewing, and will be serving signature cocktails by lead bartender Aaron Joseph and wine handpicked by sommelier Julie Dalton.

Live entertainment will also be on hand. The Rio Quartet will serenade the party with its contemporary vocals from 6 p.m. to 9:30 p.m. There’s no need to book a babysitter; kids will be delighted to join the fun with an on-site snowball machine, face painting and other activities. The night will end with a bang as the Baltimore fireworks show lights up the panoramic views of the historic Inner Harbor.

Tickets include one featured beverage which includes guest’s choice of wine, beer or a specialty cocktail. At the event, guests are encouraged to use the hashtags #WitontheWater and #WW4thofJuly.

Wit on the Water

Wit & Wisdom, in the Four Seasons Baltimore, will be reopening their lovely outdoor patio very soon. Very soon. In fact the kickoff will be next Wednesday, April 9th, a joint event with Audi Hunt Valley to introduce the new 2015 Audi A3. Starting at 4pm, attendees can enjoy live music, lite fare, a photo booth, and an exclusive chance to preview the new A3. There will also be a special A3 Mule cocktail to commemorate the event. And...the first 100 guests to arrive will receive complimentary valet parking, courtesy of Audi Hunt Valley.

Executive Chef Zack Mill's tavern menu will include housemade charcuterie and four burgers like the bourbon steak, topped with Cabot clothbound cheddar, sour pickles, and top-secret sauce. There's also a lamb burger with confit tomatoes, pan-seared onions, and tzatziki. And in warmer weather, we'll all be happy to slurp the War Shore Oyster Company oysters and crack the crab on the ice-cold shellfish platter.

Lest you think that April 9th seems a bit early for outdoor dining, Wit on the Water will be equipped with new outdoor heaters, which will allow for extending the season well into the fall. There are also new flat screen televisions, and a special Wednesday happy hour that extends the usual festivities and dining specials a full hour to 8pm.

Progressive Dessert Tasting at Wit & Wisdom

How would you feel about having a dinner that consisted only of dessert? (Life is short, you know....) Five of them, presented one after the other. Dessert as appetizer course and soup course. Dessert as fish course and meat course. And dessert as well...dessert. I'm not talking about a slab of cheesecake followed by creme brulée, coconut cake, apple pie, and a brownie sundae, but rather a series of sophisticated flavors and textures, as layered and nuanced as in a savory meal. But predominately sweet.

Dessert tasting menus have been a thing in cities like New York and Chicago for a while now. While we can't yet compare Baltimore's food scene to either of those foodie destinations, it's nice to see interesting new trends hit our area. Is Baltimore ready? I'd like to think so. Especially after sampling the creations of the new pastry chef at the Four Seasons Baltimore, Dyan Ng. Chef Ng wanted to introduce her talents to the area via a five-course dessert tasting, and Mr Minx and I were thrilled to participate.

Chef Ng's resume includes nine years in Las Vegas where she was pastry chef de cuisine for all of the restaurants at Caesar's Palace. Currently, she's responsible for desserts at both Wit & Wisdom and Pabu, plus the sweet treats at Lamill Coffee. For our dessert tasting, she prepared five courses, each of which were paired with an appropriate alcoholic beverage chosen by one of the restaurant's sommeliers.

Chef Ng isn't a fan of heavy or overly sweet desserts, instead favoring interesting interplay of flavor and texture. She started us off with a dish that shows off the simple apple. The raw and cooked elements, which included a sweet-tart apple sorbet and caramelized apples, made this dessert both refreshingly sophisticated and apple-pie homey.

The second course, a play on "lemon meringue," resembled the trendy appetizer of roasted bone marrow; it was a triumph of textures. The meringue itself was light and delicately crunchy and held buttery bits of almond and tangy grapefruit. The sherbet on the side somehow took a rich ingredient, avocado, and made it even more decadent (and I can imagine a tiny scoop of it served quite successfully with some tuna tartare at Pabu). As far as cilantro on dessert--the answer is "yes."

The third course highlighted the unusual combination of white chocolate and olives. If you think about the current popularity of salted caramel and salted chocolate items, it makes perfect sense. The briny bitterness of olives cuts the buttery creamy flavor of white chocolate. The dish also featured a variety of textures, including the glassy top sheet of crisp isomalt (that we broke through, creme brulée-like), white chocolate mousse, olive oil foam, and an extra savory bit of pine nuts, golden raisins, green olives, and extra virgin olive oil at the very bottom.

The fourth course was a risotto made with chocolate and chunks of banana. On top was a pile of shaved frozen foie gras, and the whole was seasoned with truffle salt and truffle oil. Despite the savory elements, there was no mistaking this dish for anything but a dessert. Think of it as a marriage between rice pudding and chocolate pudding. But with shaved foie on top.

Our fifth course was a "cheese course," that included lightly caramelized tomato "marmalade," along with a lovely tomato water gelée, blue cheese ice cream, and a goat cheese foam. Blue cheese ice cream! Fabulous.

And just when we thought we were done, as the menu listed only five courses, we were brought a large sandwich cookie comprising creamy chocolate ganache and fresh raspberries between two chewy wafers that were texturally somewhere between a macaron and an almond cookie. (These babies are available at Lamill.) It was wonderful, but we were stuffed. And you know, it didn't seem like we had just eaten five desserts. Each course was balanced, and none were overly-sweet. My favorite was the cheese course, with the olive and white chocolate coming in second. Mr Minx was a fan of the risotto. Both of us were simply blown away by Chef Ng's creativity, and the seriousness of her playfulness (if that's a thing). After eating our way around the city for many years now, our palates were ready for a multi-course dessert tasting.
